• 1 lb Local Leeks

• 3 lbs Fingerling Potatoes ORGANIC

• Shallot ORGANIC

• Thyme ORGANIC

• Rosemary ORGANIC

• Garlic ORGANIC

Serves 4

Preheat oven 425

• Wash leeks, and chop into 3/8 inch slices

• Place leeks in Large bowl

• Cut potatoes in half, tip to tip + Potatoes to Leeks

• ADD 1.5 Tablespoons of the oil into the potatoes and leeks.

• ADD Chopped Garlic + Chopped Thyme+ Chopped Rosemary + Chopped Shallot

• Toss Everything in herb Goodness and place on sheet tray in one layer

• Sprinkle Salt & Pepper.

• Bake for 30 to 45 minutes.
