What's for Dinner? It's Time for the Tastes of Fall!

The month of September is when we really shift from the lazy days of summer grilling to routine schedules and the hearty flavors of fall.One of the first seasonal fall vegetables to hit our market store is delicata squash, which is sweet and creamy when roasted and even has a thick, edible skin, so it’s super easy to cook. No peeling needed!

Delicata squash is a variety of winter squash with cream-colored cylindrical fruits striped in green or orange that are easily cooked. As its name suggests, it has characteristically a delicate rind. It is also known as peanut squash, Bohemian squash, or sweet potato squash.

From apples and arugula to other winter squash varieties and zucchini, we are getting excited about seasonal fall produce and the many ways we can prepare them. We will start carrying apples for delivery and in our Findlay Market store later this month.

Follow these tips to properly store apples you plan on using in a few weeks:

  1. Keep apples at room temperature. Whole apples left on the counter, away from direct sunlight, will keep for a week.

  2. Store apples in the crisper drawer. Whole apples can last up to six weeks in the refrigerator crisper drawer. To keep them fresh, wrap the apples in a damp paper towel or place them in a plastic bag with holes. Make sure you store apples away from other produce because the ethylene gas that apples give off will make other fruits and vegetables ripen more quickly.

  3. Squeeze lemon juice on apple slices. Cut apples will keep in the refrigerator for three to five days. You can toss the apple slices in lemon juice to keep them from browning.

Grilled Delicata Squash with Local Chicken Italian Sausage Crispy Potatoes, Local Greens & Italian Parmesan

A Late Summer Dish incorporating the harvest of the last of summer produce and early fall squashes.

Preheat your gill so its nice and hot or if it’s a rainy night as it has been lately, you can use your oven set at 425 degrees.

1. Cut Delicata Squash stem to stem, scooping out the seeds. LEAVE SKIN ON!

2. Cut into half moons about ½ thick.

3. Place on Sheet pan with High Temp Oil & Grill Seasoning Garlic Goodness is my Favorite

4. Poke Idaho potatoes and microwave them for 5-7 minutes until fork tender.

5. Cut potatoes long ways and place on sheet pan with Delicata squash.

6.  Roll potatoes in oil and Garlic Goodness

7. Grill Chicken Sausages

8. Cook Delicata Squash until tender 7-8 Minutes

9. Place potatoes on grill until crispy 5-7minutes

10. Sprinkle Parmesan on potatoes after they are grilled and crispy.

11. Dress Local Greens in Carfangnas Family Italian Dressing

12. Plate Potatoes, Delicata, dressed Greens and then sausage for a beautiful & easy late summer early fall Dinner.

Can’t find Delicata?? You can use Acorn or any other squash that you can eat the skin.

Don’t like Parmesan Cheese? Goat cheese is a great alternative in this recipe.

Dairy Free? Skip the real parm and use a Parm Alternative or Nutritional Yeast.
