Local Bundle Late Summer Chicken Tacos with Local Pasture Raised Chicken, Local Grilled Peach & Corn Salsa, Local Greens & Tomato Salad

  • Local Pasture Raised Chicken Breast

  • Local Flour Tortillas

  • Local Roothouse Butter Lettuce

  • Red Onion ORGANIC

  • 4 Local Ohio Tomatoes

  • 4 Ears Georgia Corn

  • 6 Local Peaches

  • Local Colonel De Grill Seasoning

  • ETC Cilantro Micros

  • Lime ORGANIC

  • Jalapeno ORGANIC

  • Local Corn Chips

Serves 4

Recipe:

Late Summer Dish incorporating the harvest of the last of summer produce.

1. Preheat your grill so its nice and hot

2. Season Local chicken breast with adobo seasoning & Salt and Pepper.

3. Grill Chicken to 165 internal temperature approx. 9-12, flipping halfway.

4. Shuck Local Corn and rub on a high temp oil such as avocado & Salt and Pepper

5. Grill corn till kernels plump and slightly char, set aside to cool

6. Cut local peaches and half and discard pit. Rub on High temp oil all over peaches

7. Grill peaches hard on the open side of the peach to get picture perfect grill marks.

8. Grill Peaches until slightly soft, just enough to carmelize the sugars in the peach.

9. For the Salsa- Cut Corn off Cob + Dice locally grown Red Tomatoes + Dice ½ Red Onion + 1 Whole Roasted Serrano pepper(See Footnote) + Diced Peaches + 15 sprigs Cilantro + juice of ½ a lime into bowl Season with Salt & Pepper and Adobo seasoning. Toss until everything is coated and incorporated. Set aside to let flavors mingle.

10. Dress Local Greens with the other Half of lime, a nice olive oil and salt & Pepper and a dab of Dijon mustard in a mason jar and shake until combined

11. Cook tortillas on grill until bubbly 30-45 seconds on each side

12. Slice chicken breast and place inside tortilla with corn and peach salsa

Looking for a vegetarian dish?? You can use a Delicata or Acorn squash any squash that you can eat the skin is best.

Hot or mild Salsa? After roasting your whole serrano pepper in a cast iron skillet or open flame take the seeds and ribs OUT for a mild salsa.
